easy

Plain Buttermilk, locally known as 'Mor' or 'Lassi Tawar', is a classic beverage deeply rooted in Malaysia’s multicultural cuisine, particularly among the South Indian communities in regions like Brickfields, Kuala Lumpur, and Penang. This refreshing drink is made by blending low-fat yogurt with water and seasoned with local herbs like daun kari (curry leaves) and fresh coriander, creating a cooling and hydrating beverage perfect for Malaysia’s tropical climate. It is often enjoyed during hot afternoons or served at vegetarian meals to aid digestion. The taste of Plain Buttermilk is mildly sour, creamy, and pleasantly savory, thanks to the unique addition of spices such as cumin and ginger. This beverage stands out for its simplicity and versatility, easily adapted with Malaysian ingredients like pandan leaves or lemongrass for aroma. Malaysians cherish buttermilk for its ability to soothe the digestive system, especially after spicy meals featuring sambal or kari. When prepared in its healthiest form, it is low in calories and high in gut-friendly probiotics, making it an excellent choice for those tracking their calorie intake. In the local context, Plain Buttermilk is more than just a drink—it's a symbol of hospitality and nourishment, reflecting Malaysia’s rich culinary heritage and the fusion of flavors brought by its diverse communities. Whether served at home, in vegetarian restaurants, or during festive gatherings, this beverage is beloved for its simplicity and health benefits.

Instructions

  1. 1

In a large bowl, whisk the low-fat yogurt until smooth and creamy.

    2 minutes

Ensure there are no lumps for a silky texture.

  2. 2

Add the filtered water gradually to the yogurt, whisking continuously until well-blended and frothy.

    3 minutes

Adjust water for desired consistency; thinner for drinking, thicker for serving with rice.

  3. 3

Stir in the grated ginger, cumin powder, and salt. Mix thoroughly.

    2 minutes

Grate ginger finely to avoid fibrous bits.

  4. 4

Add the torn curry leaves and chopped coriander. If using, add the green chili, pandan leaf, and lemongrass.

    2 minutes

For a mild version, omit chili; pandan and lemongrass add fragrance but can be removed before serving.
